Carrot Pulp Muffins

Ingredients:
coconut oil or butter (to grease pan)
1.5 cups of carrot pulp (after juicing)
1/2 cup organic apple sauce
2 organic eggs
2 Tbsp. organic brown sugar
1 cup organic spelt flour
1/4 cup organic rolled oats
1 tsp. cinnamon powder
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. ground nutmeg
1/4 tsp. ground ginger
1/2 cup chopped walnuts
Directions:
Preheat the oven to 350 degrees F
Grease your muffin tray with coconut oil or butter
Mix your carrot pulp, applesauce, eggs and brown sugar together in a bowl
In a separate bowl, mix together spelt flour, oats, cinnamon, baking soda, baking powder, nutmeg and ginger
Add flour mixture to carrot pulp mixture until blended
Add in chopped walnuts
Scoop batter into the muffin tin and fill each cup to the top.
Bake for roughly 25 minutes or until knife or toothpick comes out clean
