Carrot Pulp Muffins

 Ingredients:

  • coconut oil or butter (to grease pan)

  • 1.5 cups of carrot pulp (after juicing) 

  • 1/2 cup organic apple sauce

  • 2 organic eggs 

  • 2 Tbsp. organic brown sugar 

  • 1 cup organic spelt flour 

  • 1/4 cup organic rolled oats

  • 1 tsp. cinnamon powder

  • 1/2 tsp. baking soda

  • 1/2 tsp. baking powder

  • 1/4 tsp. ground nutmeg

  • 1/4 tsp. ground ginger 

  • 1/2 cup chopped walnuts

Directions:

  • Preheat the oven to 350 degrees F

  • Grease your muffin tray with coconut oil or butter

  • Mix your carrot pulp, applesauce, eggs and brown sugar together in a bowl

  • In a separate bowl, mix together spelt flour, oats, cinnamon, baking soda, baking powder, nutmeg and ginger 

  • Add flour mixture to carrot pulp mixture until blended 

  • Add in chopped walnuts

  • Scoop batter into the muffin tin and fill each cup to the top. 

  • Bake for roughly 25 minutes or until knife or toothpick comes out clean
